Lobster Salad Recipe

Every now and then we treat ourselves to lobster tails from Costco. They always come in too large of a package for one meal so I make a lobster salad with the left overs. It’s a decadentĀ treat and we usually just add a small green salad to make it a complete dinner. I start withĀ six small lobster tails,Ā baby potatoes and a small bag of watercress.

I’ve made this recipe with both warm and cold water Lobster Tails and both taste amazing.

I run a wooden skewerĀ up my lobster tails so they won’t curl too much while grilling.

I change this a little bit each time I make it depending on what’s handy, but here is the original.

Ingredients

Directions

Whisk together the mustards, honey, vinegar and salt and pepper in a large bowl. Slowly whisk in the olive oil until emulsified and stir in the cilantro. Let sit at room temperature until ready to use.

Heat grill to medium.

Brush potatoes with canola oil and season with salt and pepper, to taste. Grill until lightly golden brown on both sides and just cooked through, about 2 minutes per side. Add the warm potatoes to the dressing, and toss to coat.

Add the lobster and the watercress, season with salt and pepper and toss to combine. Transfer to a platter and serve.

  1. I picked up a couple of Lobster tails on sale at the market yesterday and am having He-man grill them today. I don’t think there will be any leftovers since I only bought two tails, but he priced them at Costco today so, if they come out good we’ll be doing this again, and have leftovers to try this salad recipe too.
