Cozy Morning

~on Vancouver Island~

 

It’s blustery and chilly this morning.

 

My husband has already laid the fire for us to light at a moments notice.

There is a small element of fire bug in him to be sure. He revels in his fires and takes great pride when they roar as evidenced by the black sooty back to our fireplace.

 

My knitting sits at the ready.

 

The mist has brought a faint rainbow to enjoy.
But before I indulge in a long luxurious “toasting” by the fire…I’m making Carrot Ginger Coconut soup.

 

 

The carrots, onions and garlic are chopped.

 

I sweat the onions and garlic as the carrots are cooked in some chicken broth.

 

Minced fresh ginger is added next along with some chopped cilantro.

The carrots and broth are then combined with the onion mixture.

 

Organic coconut milk goes in next. I try to always eat organic if possible…the favors are stronger and the fertilizers and pesticides in regular food scare the living day lights out of me.

I pause to add…

 

a warm cup of Calm tea to the mixture in me.

 

A quick purée with my immersion blender, a little salt & pepper and I get to sit with my tea while the soup simmers.

 

Nothing seems quite as cozy to me as knitting or reading by the fire with homemade soup cooking on the stove.

Except…if I had some yeast to bake some crusty homemade bread.
Hmmm, its now on my shopping list for tomorrow because with this weather I feel the nesting urge to make lots of soups. Plus it will be lovely to have warm homemade rolls with Thanksgiving Dinner.

What do you like to do on blustery cold days that aren’t fit for man nor beast to be outside?

    The soup sounds delicious
    I have never tasted that variety before
    but it does sound scrumptious!

    My husband is obviously like yours in that he always likes to have a roarinng fire going.

    I hope that you have a lovely Thanksgiving.

    Do you have something nice to wear on the day?

    I envy your knitting, I just can’t seem to grasp it 🙁

  4. It is briskly cold, but sunny here in Upstate. The young folk are arriving today for a Thanksgiving stay and I have a pot of vegetable beef soup simmering for their arrival. They call it “red soup” because, unlike my beef stew, the broth is thinner with the addition of crushed tomatoes and beef consomme. I would love to take up knitting again, but for the moment, I will spend cold, blustery days reading a good novel or practicing guitar.

    Your soup looks scrumptious and is one I would love to try.

    Hand blender question! When you press *whirr* do you hold the base flush to the pan? Does it not scratch the saucepan? I’ve wanted one for ages but I’ve always wondered about that.

  7. This is definitely hot homemade soup weather and if I could knit you can be sure I would be doing that too. Your home not only looks very inviting. I like to curl up with a book, sew or pretend sew, and paint on blustery days.

  8. I admire anyone who can knit. I have trouble sewing on a button — all thumbs. Luckily, I’m much better in the kitchen, and I know a good cook when I see one. I can almost smell your delicous soup.

  9. I just happened upon your lovely blog. I love an excuse to curl up by a crackling fire with a book or my knitting, the pup laying nearby. Add an aromatic soup simmering on the stove. Perfection!

  10. I love many of the things you mentioned. Reading, cooking, baking are some of my favorites. Also working on my needlepoint pillow. It’s my favorite time of the year and I always go into nesting mode!

  12. I’ve no fresh ginger in the house otherwise I would be making this soup right now, it looks delicious! I like to be cooking in the kitchen when the weather, as today, cold and wild. Close by the Aga is the warmest part of the house!
